The dish you see above is the dish I returned home to after four days on the west coast, at a conference overeating carbohydrates. I have at times in my career been legendary for the lengths I will go to avoid conference travel, almost precisely because it gets me so far out of my diet and fitness routine.
But this dish is a real welcome home: Italian chicken stew, or spezzatino. If you read the reviews there, lots of folks add zucchini or summer squash, or additional celery and carrots.
